Product Abstract: Thyme is an evergreen perennial shrub that grows up to 45 cm (18 inches) in height. It has a woody root system with a multi-branched stem. It has small, elliptical, greenish-grey leaves and pale purple or white flowers. Thyme is derived from the Greek word thymos, which means ‘perfume.’ The ancient Romans used Thyme in their herbal medicines, the ancient Greeks used it as incense in their temples, and the Egyptians used it in their embalming practices. During the Middle Ages, it was given to jousting knights for courage. Later, judges came to carry sprigs of Thyme with them into their courtrooms to ward off diseases. For Millenia, Thyme has been popular as a flavoring agent in foods.
